Our chefs have created three new dishes to add to our menu inspired but the Expressionists which can be enjoyed with an artistic inspired cocktail.

A Bavarian white sausage has been developed in collaboration with our butcher, HG WALTER. We wanted to recreate an authentic German white sausage using local ingredients. The sausage is made with English pork and veal, mustard, ginger, mace lemon, parsley, with a natural hog casing.

The German inspired sauerkraut has been developed in collaboration with CULTJAR, it is made with white cabbage, black pepper, juniper, and carraway then fermented for 1 month. It will be served at room temperature as it is not pasteurised and contains live bacteria and by doing so maintains its pro-biotic benefits.

Katie Wilson

Colour Study Gimlet

Ingredients: London Dry Gin, Gooseberry Cordial, Eiswein Verjus, Lime Oil 18.25% abv

A tart and refreshing take on a classic gimlet using the juice and pulp of green gooseberries. Colour Study Gimlet was inspired by one of Wassily Kandinsky’s most famous pieces - Squares with concentric circles. We looked to replicate the artwork’s imagery directly in the drink and utilise the cocktail as the canvas.

X-Bier

Ingredients: Wild Blueberry Vodka, Lacto Bluebbery, Strisselspalt Hops, Soda 7.75% abv

A blueberry vodka soda that has been dry hopped in tank with Strisselpalt and Mosaic hops. X-Bier is a cocktail inspired by Gabriele Münter and her work “X-Bier”.
